Sinigang with Lagikway

Warm your soul with Sinigang na Baboy, a beloved Filipino sour soup. This hearty dish features tender pork spare ribs simmered to perfection with a vibrant medley of fresh vegetables, including string beans, eggplant, and lagikway. The tangy broth creates a refreshingly savory and authentic Filipino culinary experience.

Ingredients:

  • ½ kg pork spare ribs cut into chunks (or any preferred meat)
  • 1 L water
  • 1 bulb red onion of regular size, quartered
  • 1 tomato of regular size, strips
  • 8 pieces string beans, sliced into 5 cm pieces
  • 1 taro of regular size, wedges (optional)
  • 1 eggplant of regular size, sliced
  • 250g lagikway stalk and leaves
  • 2 long green chilis (also known as “siling haba” or “siling pangsigang”)
  • 1 20g pack sinigang sa sampalok mix, original or gabi

Instructions:

  1. Wash the pork spare ribs in cold running water, then submerge them in a medium pot with water. Bring it to a boil without a lid. Allow the scum to float to the surface, then remove the scum using a slotted spoon or a spatula.
  2. When the broth clears up, turn the heat to medium setting, then add the onions and tomatoes. Cover the pot and let it fully simmer to cook. Use a fork to pierce the meat so that the flavor can enter the meaty parts of the spare ribs, and to check if the meat is tender.
  3. Add the vegetables (start with string beans, taro, then eggplant) into the pot. Cook until the color of the vegetables turns dark green, then add the lagikway. This should be cooked within 2-3 minutes to avoid the overly sogginess of vegetables.
  4. Add in your siling pangsigang and sampalok mix. Stir and let it simmer.
  5. Transfer to a serving bowl.
