Kulitis Tempura

Savor the crispy goodness of Gulay Tempura, a delicious medley of assorted vegetables lightly battered and fried to golden perfection. This recipe transforms chopped squash, okra, eggplant, string beans, sweet potato, onion, and kulitis into irresistible bites. The key to its perfect crispness lies in the cold batter, ensuring a light and airy texture with every delectable piece. Perfect with home-made Kulitis Dip.

Allergen Warning:

Contains egg. All-purpose flour may contain wheat.

For Batter:

  • 1 egg
  • 180ml water with ice
  • 125g all-purpose flour for coating

Main Ingredients:

  • 140g squash, 0.5-1cm thick cuts
  • 100g okra, 3cm thick cuts
  • 250g eggplant, 0.5-1cm thick cuts
  • 150g string beans, 3cm thick cuts
  • 150g sweet potato, 0.5-1cm thick cuts
  • 100g onion, 0.5-1cm thick rings
  • 225g kulitis, 6cm cuts
  • 600ml cooking oil for deep frying, may vary depending on pot size (5-8cm deep in pot)
  • Salt to taste, about 2-4 pinches
  • Ground pepper to taste, about 2-4 pinches

Instructions:

  1. Mix the egg with the ice water well using a fork or wire whisk.
  2. Pour the flour slowly into the mix, and mix until all lumps disappear, making sure the batter stays cold. The bowl of batter can be placed on top of ice.
  3. Heat the oil in a deep pot. Coat the vegetables in the meantime until the oil is ready. The correct frying temperature for oil is 190 degrees Celsius.
  4. To coat, use your non-dominant hand for wet and your dominant hand for dry. First, using your hand for wet, dip each vegetable one by one in the cold batter, then coat. Transfer it to flour, then switch to using your hand to coat it. Repeat a round of coating in batter and flour to double coat.
  5. When the oil is ready, fry each vegetable until golden brown.
  6. Season with ground pepper and salt before serving.
